I am curious as to which level of technology the world currently have, is it equal to the dark ages (5th-7th century), the feudal ages (7th-10th or the late middle ages (1066+). Or is it a sword and sorcery universe?

I'm going to have to say dark ages with a hint of sword and sorcery:
Farming:
Ploughs are still horse/cattle driven. Cow's are hand-milked. Grain is hand sewed. Wheat and other grains are harvested using traditional scythes. Fruit is hand picked.
Grain is turned to flour by use of rudimentary windmills or watermills if strong flowing waterways run through the farm.
Army
We have no formal orders of Knights yet but cavalry are still available. (It is the cavalry that has given rise to jousting in Shrenks lands) Soldiers are armed in chain mail. Serfs put to fighting are often garbed in cheaper leather armour. Mounted soldiers in the cavalry are able to wear suits of plate armour as they don't have to worry about running across the field.
Seige weapons are also available for use. Basic catapults, ballista and trebuchet are the most common along with battering rams.

Great, thank you I hope this will not mean that swords are common though. After all, they used to be very expensive weapons and only the rich could afford them (in fact, if you did not look rich you could be arrested for having a sword). If there is one thing I loathe about all others in fantasy it has to be weapon/armour supermarkets were all types of weapons are available for just a minor sum

I share that hope. If i find too many people joining with swords i'll do my best to sway them. As it stands the characters i choose to use are either unarmed or armed only with hunting gear so you wont have to fear from me. *wink*
